Dominoes Style Garlic Bread
Dominoes style Garlic Bread stuffed with Cheese

Ingredients:
1 Cup Maida / APF
1 tsp Sugar
Don't add salt here. We add so much of the Italian seasoning that it will be too much salt.
1/4 Cup melted butter
1 Cup grated cheese, you get diced mozzarella nowadays. So it's easy peasy.
Olive oil
Water
1/4 Cup Olive oil, add 3-4 Garlic cloves, minced. Plus 1 tsp Italian seasoning, or just Oregano powder and salt. The little packets you get with the pizzas from Domino's will also do. But these packets have salt mixed with the herbs.
1/3 cup warm water (15 secs in the micro)
1 tsp Dry Active Yeast
1/4 Spoon Sugar
2 tbsp milk
Keep for 10 mins. Keep in a warm place. In the winter it will not froth becoz outside temp is cold. The yeast shud be frothy. If the water is hot then the yeast will not activate. It must be warm. Gentle.
Take a big mixing bowl. Add the top items Maida, Butter, Italian seasoning and Water. Add the frothy yeast mix. Add water slowly and make dough. Soft dough. Not roti ka aata tough. Knead the dough for 10 mins. Back and forth. Add little flour at a time. In 3 stages. Mushy add flour. Little tougher add flour. And finally add flour to make it soft dough. Do no add all together. Also water add a bit at a time. Cover with cling film and keep in a warm place. Like the oven. I proofed the dough for 2 hours. The longer you do the better the results. You can even make it a day before. Make sure you keep it in a warm place. (Too much instructions already).
Grease a baking tray, spread the dough like in a circle. Brush the garlic oil mix above, generously. I even greased the baking tray with this oil mix.
Put lots of cheese on half a side. Fold the other half over. Press down the sides. Make slits on top to get the bread sticks. 5 or 6 1 inch space apart.
Preheat oven - 180C for 10 mins. Bring the temp down to 150C and bake the bread for 10mins. Keep an eye here this bread will burn easily.
We can have this with Mayonnaise, Bbq Sauce, Mustard, I had it with Chipotle sauce. Yumm.
